Actual trend of consuming plant-based foods (vegetable protein), which includes flexitarians, vegetarians and vegans, continues to increase each year. According to Statista (2022), growth will be approximately 14% between 2020 and 2035. Latin America and Asia-Pacific are the regions with the greatest commercial projection. Therefore, companies must prepare to get to know their customers better and offer products according to their needs. Calabuig, Molina and Nuñez, (2012), refer to perceived quality as a long-term assessment after consumption. In such a way psychosocial elements of a cognitive and affective nature intervene. The instrument mostly used to measure perceived quality is called "servqual". The present investigation is developed in the scenario of offering a reliable instrument with construct validity to evaluate the perceived quality (PC) for the plant-based food market. Theoretical support of several authors was considered to define the dimensions: Customer Service, Innovation and Socially Responsible Commitment. For the evaluation of the PC, 16 items were developed. When performing the exploratory factor analysis with the JAMOVI 2.2.3 software, it was found that the established criteria were met (KMO, Bartlett's sphericity test, fit indices and total explained variance). Regarding the rotated factorial solution, 11 items were grouped into the corresponding factors, four items presented higher loads in another factor and one item reported a load lower than .3. The final reliability for the PC was .783 Cronbach's alpha and Mc Donald's omega .883. In both cases, the results obtained indicate a high reliability of the instrument. When performing the confirmatory analysis with the proposed factors, similar adjustment indices are again obtained CFI .862, TLI .83; the goodness of fit test has significance less than .05, (X2=208, gl=74, p= .001).
